Saba (cooked grape must) is a versatile, amber-colored condiment with a sweet and fruity character – dense, dark brown, and pleasantly caramel-like in flavor. Known since antiquity, the must is traditionally boiled and concentrated outdoors for many hours until a creamy-sweet syrup is produced, which enhances the natural flavor of a wide variety of dishes.
