Create a small evening ritual for yourself: a tablespoon of organic extra virgin olive oil – either pure or in a small glass of lukewarm water. Give it 2–3 weeks; the higher the polyphenol content of the oil, the more noticeable its benefits.
Even after the first 1–3 days, the stomach often becomes quieter: less pressure, less bloating. The oil coats the intestinal wall like a gentle "glider" and can aid passage. Between days 3 and 5, cravings subside: fatty acid components like oleic acid nourish the body's own satiety signals (OEA) – evening snack cravings fade into the background. From about day 7, the metabolism feels smoother after meals: studies have shown that extra virgin olive oil can mitigate blood sugar spikes – compared to butter or "low-fat" diets.

Why we love olive oil
A generous drizzle of olive oil makes vegetables juicier, pasta more tender, and salads more vibrant. "Extra virgin" means purely mechanically extracted, cold-extracted below 28°C – nothing but olives, full of character. Naturally, it contains a high proportion of monounsaturated fatty acids (especially oleic acid) and valuable polyphenols that shape the flavor and – when consumed regularly – can contribute to a balanced lifestyle.
Replacing saturated fats like butter with unsaturated fats from olive oil helps maintain normal cholesterol levels. And at 20g of olive oil daily, the polyphenols it contains can protect blood lipids from oxidative stress – provided the oil is sufficiently rich in polyphenols. Ritual, not obligation: 1-2 tablespoons daily – in salads, over roasted vegetables, or on its own in the evening. Consistency is more important than perfection.

Don't be afraid of the heat
Whether raw, sautéed, or even deep-fried – good extra virgin olive oil remains calm. It's a reliable partner up to about 180°C; the number is less important than your perception: if an oil smokes, it's getting too hot, so reduce the heat or change the oil.
Filtered EVOOs with few suspended particles are particularly well-suited for deep-frying because they taste clean and retain their shape. This allows you to cook intuitively – with enjoyment and without dogma.

This way your olive oil stays fresh for longer.
Aroma thrives in the shade and tranquility. Store your oil in a dark place at around 15–20 °C – not in the refrigerator – and regularly decant the 3-liter storage container into dark 0.5–0.75-liter bottles. The less air in the container or bottle, the longer the flavor will remain crisp. The best-before date is generally around 18 months; naturally cloudy oils are best enjoyed sooner and not cooked at excessively high temperatures. Freshness here isn't a requirement, but a pleasure.
More than just seasoning: Why olive oil is good for you
Organic extra virgin olive oil is a quiet health ally: Replacing saturated fats with it contributes to maintaining normal cholesterol levels. At around 20 g daily and with sufficient polyphenol content, its polyphenols protect blood lipids from oxidative stress. Studies also suggest smoother blood sugar responses after meals, beneficial effects on blood pressure, and an overall heart-healthy dietary profile; large cohorts also link regular olive oil consumption to benefits for cognitive health. The gut and liver also benefit: Polyphenols can positively modulate the microbiome, and a Mediterranean diet rich in extra virgin olive oil is less frequently associated with fatty liver disease.
