Garrigue wild-herb honey from Spain's Mediterranean scrubland | 910 g jar

Miel de garriga is created in Spain's Mediterranean scrubland – where thyme, rosemary, sage, savory and rockrose fill the air with a spicy fragrance. Here the bees gather a nectar that comes together in the jar as an aromatic, warm and herbaceous honey: amber to dark amber, clear in line and with a gently balanced sweetness. On the palate it is round and balsamic, with a fine, Mediterranean finish.

The fine- to medium-grained crystallisation gives a creamy melt – ideal for goat's & sheep's cheese, over oven vegetables (aubergine, pepper, pumpkin), in herb vinaigrettes or as a savoury accent on dark bread with salted butter. For tea or lemonade, please stir in lukewarm so the herb notes are preserved.

All honeys at auteniQ come from a single family business: Apícola Cuartero in Fuendejalón at the foot of the Moncayo (Aragón). What Juan Cruz began in 1981 as a small apiary is now run by the third generation – the honeys bear his name: Miel del Tío Juan Cruz. Around 3,000 bee colonies migrate each year, following old tradition, to the respective flowering regions of Spain, from mountain heaths to the orange groves of the Levante. No pesticides around the hives. Bottled single-variety, with no blending of outside product. Each vintage therefore tastes different – weather and flowering time shape every harvest individually.

Note on crystallisation: Pure honey crystallises naturally depending on variety and temperature. If needed, gently liquefy in a water bath at low temperature.
