Miel de garriga originates in Spain's Mediterranean scrubland – where thyme, rosemary, sage, savory, and rockrose fill the air with their spicy fragrance. Here, the bees collect nectar that combines in the jar to create an aromatic, warm, herbaceous honey: amber to dark amber in color, clear in color, and with a gently balanced sweetness. On the palate, it is round and balsamic, with a delicate, Mediterranean finish.

The fine to medium-grained crystallization ensures a creamy melt – ideal for goat and sheep cheeses, over roasted vegetables (eggplant, peppers, pumpkin), in herb vinaigrettes, or as a flavorful accent on dark bread with salted butter. For tea or lemonade, please stir in while lukewarm to preserve the herbal notes.

Located between the Ebro Valley and the foothills of the Moncayo Mountains (Aragón), this family-run beekeeping operation manages approximately 3,000 bee colonies at select locations in Spain. Thanks to migratory beekeeping, the colonies follow natural nectar flows – including orange blossom, rosemary, and thyme in Aragón, lavender in summer locations, and heather in higher regions. The apiary sites are chosen far from intensive agriculture, ensuring bee-friendly, natural environments.
In processing, Tío Juan Cruz relies on traditional steps adapted to modern, gentle techniques: uncapping, extracting, filtering, and maturing, followed by bottling – this preserves the varietal character and aroma. The result: a clear, typical honey with a delicate aroma and transparent origin.

Note on crystallization: Pure honey crystallizes naturally depending on the variety and temperature. If necessary, gently liquefy it in a water bath at a low temperature.
