Blossom honey from Spanish summer meadows | 910g jar
Our blossom honey (Mil flores) comes from the expansive meadows of the Ebro Valley: a nature-rich landscape of meadows with alfalfa, clover, and field and meadow herbs. This diversity shapes its well-rounded, floral-fruity aroma – light gold to delicate amber in the glass, clear in its structure, and with a pleasantly long, smooth finish. A true all-rounder: perfect for breakfast bread, yogurt and muesli, herb vinaigrettes, or as a subtle honeyed accent to mild cheeses and ripe fruit. As this is a polyfloral vintage honey, the color and nuances may vary slightly depending on the season – nature at its best.
On the palate, it reveals cool, floral notes and a subtle herbal freshness that lingers elegantly in a long, clean finish. The fine-grained crystallization ensures a creamy melt and a spreadable texture – ideal if you're looking for sweetness with character rather than mere sweetness. Perfect with goat's and fresh cheese, yogurt with berries or peaches, in lemon vinaigrettes, or as a delicate accent to dark bread with salted butter. For tea or homemade lemonade, stir in lukewarm to preserve the aroma and complexity of the flavor.
Located between the Ebro Valley and the foothills of the Moncayo Mountains (Aragón), this family-run beekeeping operation manages approximately 3,000 bee colonies at select locations in Spain. Thanks to migratory beekeeping, the colonies follow natural nectar flows – including orange blossom, rosemary, and thyme in Aragón, lavender in summer locations, and heather in higher regions. The apiary sites are chosen far from intensive agriculture, ensuring bee-friendly, natural environments.
In processing, Tío Juan Cruz relies on traditional steps adapted to modern, gentle techniques: uncapping, extracting, filtering, and maturing, followed by bottling – this preserves the varietal character and aroma. The result: a clear, typical honey with a delicate aroma and transparent origin.
Note on crystallization: Pure honey crystallizes naturally depending on the variety and temperature. If necessary, gently liquefy it in a water bath at a low temperature.
