The Colomba Giusti is created from the combination of tangy-sweet balsamic vinegar and the delicate sweetness of the traditional Italian Easter cake: fragrant, soft, and exceptionally aromatic – a modern interpretation of the classic. The Aceto Balsamico di Modena IGP “3 Gold Medals” is not only added directly to the dough but also used to marinate the raisins and to round out the cream filling, before the cake is finished with a dark chocolate glaze.
Ingredients & Allergens
Wheat flour, raisins 16%, cream filling with Aceto Balsamico di Modena IGP 14% (sugar syrup, glucose syrup, Aceto Balsamico di Modena IGP 23% (cooked grape must, wine vinegar, modified corn starch, thickener: sodium alginate), butter (milk), fresh eggs, sugar, dark chocolate glaze 6.5% (sugar, cocoa cream, cocoa butter, emulsifier: sunflower lecithin, natural vanilla flavoring), egg yolks from fresh eggs, natural yeast (wheat flour, water), milk, Aceto Balsamico di Modena IGP 1.6% (cooked grape must, wine vinegar), emulsifiers: mono- and diglycerides of fatty acids, glucose syrup, cooked grape must, flavoring, salt. Contains sulfites. May contain traces of legumes and soy.
Serving suggestion
Best enjoyed slightly warmed to allow the flavors to fully develop. It pairs well with Chantilly cream or egg custard, vanilla/cream ice cream or raspberry sorbet, fresh or caramelized fruits (e.g., berries/citrus), and an aromatic touch such as a splash of vermouth or a liqueur (e.g., rum, Marsala).
