Ritual No. 4 from Cinco Jotas unites the essence of Spanish culinary culture in an exclusive tasting: Jamón, Paleta, Lomo, and Presa de Bellota – each sliced paper-thin and individually wrapped. Four masterpieces that together showcase the full spectrum of flavors from 100% Ibérico pork.
Each component comes from purebred Iberian pigs that roam freely in the Dehesas of Andalusia and feed exclusively on acorns, herbs, and roots during the acorn-fed season . This natural diet shapes the characteristic flavor, fine marbling, and incomparable texture – the hallmark of genuine Brida Negra quality.
Jamón Ibérico de Bellota:
From the hind leg, matured for over 3 years. Tender, juicy, with notes of acorns, roasted hazelnuts and wild herbs. Finely marbled and full of umami.
Paleta Ibérica de Bellota:
From the foreleg, more robust in flavor, with a salty depth and dense texture. Ideal for lovers of intense aromas.
Lomo Ibérico de Bellota:
Prime pork loin with a delicate paprika aroma, tender texture, and slightly sweet seasoning. Hand-rubbed with sea salt and spices, then air-dried.
Presa Ibérica de Bellota:
The most aromatic cut of Ibérico pork – juicy, creamy, and spicy. Full-bodied, with a gentle spiciness and a lingering, intense finish.
All four specialties are produced in Jabugo (Andalusia), where Cinco Jotas has been working according to unchanged traditions since 1879. Maturation is achieved solely through air, time, and patience – without artificial cooling or acceleration. The result is an unparalleled interplay of texture, aroma, and elegance.
Enjoyment and storage
Store in a cool place: at 3–8 °C in the refrigerator.
Keep the packaging closed until ready to serve.
Before eating: open about 30 minutes beforehand and bring to room temperature so that the aromatic fat melts slightly and the full aroma develops.
