Holiston is an extra virgin olive oil with a strong character from the island of Rhodes. The oil is produced by the Giorgiou family, who combine craftsmanship, agricultural expertise, and small batches. The olives are harvested early, carefully selected, and processed quickly – resulting in an oil with clear origins and noticeable care in every step.

The processing is special: the Koroneiki olives are cold-extracted in a modern two-phase mill. Holiston then relies not on traditional filtration, but on natural sedimentation by gravity. According to the manufacturer, this is said to preserve a higher proportion of polyphenols than conventional filtration. In addition, there's the dark apothecary bottle, the double-walled protective packaging, and the chilled storage in stainless steel containers – all designed to preserve the oil's quality for as long as possible.

On the palate, Holiston is intense, fresh, and full-bodied, with the pleasant bitterness typical of polyphenol-rich oils and a fine spiciness.
