Our heather honey (Miel de brezos crema) originates in Mediterranean mountain heaths and at high altitudes near forests, where the heather blooms densely, imbuing the nectar with a spicy, malty depth. In the jar, it displays a dark amber to reddish hue, and on the palate, it is full-bodied with resinous, balsamic notes and a long, warm finish – precisely the kind of honey that gives dishes depth and warmth.
The unique crema texture is created by gently stirring the naturally fine crystals: the honey remains firm, yet spreadable and velvety in the mouth – without heating, without additives. Ideal with aged Manchego, sheep's and goat's cheese, on dark bread with salted butter, with roasted vegetables (eggplant, pumpkin, root vegetables), or as a flavorful accent in mustard vinaigrettes and glazes. For hot drinks, please stir in lukewarm honey to preserve the heather aromas.
Located between the Ebro Valley and the foothills of the Moncayo Mountains (Aragón), this family-run beekeeping operation manages approximately 3,000 bee colonies at select locations in Spain. Thanks to migratory beekeeping, the colonies follow natural nectar flows – including orange blossom, rosemary, and thyme in Aragón, lavender in summer locations, and heather in higher regions. The apiary sites are chosen far from intensive agriculture, ensuring bee-friendly, natural environments.
In processing, Tío Juan Cruz relies on traditional steps adapted to modern, gentle techniques: uncapping, extracting, filtering, and maturing, followed by bottling – this preserves the varietal character and aroma. The result: a clear, typical honey with a delicate aroma and transparent origin.
Note on crystallization: Pure honey crystallizes naturally depending on the variety and temperature. If necessary, gently liquefy it in a water bath at a low temperature.
