Raw organic cashew pieces
Cashews aren't actually nuts, but rather the kernels of the cashew tree's unique fruit. This tree bears bright yellow, pear-like pseudo-fruits: the so-called cashew apples or arils, with their thick, fleshy stems. Because the pulp spoils quickly, it's used to make jams and juices immediately after harvesting. Beneath the cashew apple lies the actual fruit: the cashew kernel.
The universal raw food ingredient: cashew pieces
Gently dried at a maximum of 45°C and not denatured by industrial steaming or a hot oil bath, the high quality of the cashew nuts is preserved – both in taste and nutritional content. The nuts are cracked raw, sometimes by hand.
Organic cultivation and raw food processing are more complex than with conventional produce, but this is clearly noticeable in the aroma and texture.
Versatile in creative cooking
Cashews have become an indispensable raw food ingredient. They are excellent for a wide variety of uses:
- as a creamy base for smoothies,
- for the production of vegan ice cream,
- as an ingredient in plant-based desserts,
- or prepared in a savory way as a base for spicy cashew cheese.
